Today is Valentine’s Day, 2019, and I asked my Valentine which of the recipes I cook regularly is her favorite. She decided she liked my meatballs best. The recipe is basically Greek, but I’ve tweaked it a bit over the years.
4 slices white bread
1 lb. ground chuck
1 egg
1 medium onion, chopped finely
½ cup parmesan cheese plus more for serving
1 tbsp. crushed, dried mint
pinch dill
pinch nutmeg
salt and pepper to taste
flour for dredging
2 tbsp. butter
2 tbsp. olive oil
1: trim crusts from bread. Place in mixing bowl. Cover with small amount of water. Gently squeeze bread to drain excess water. Return bread to bowl.
2: Add meat, egg, onion, salt and pepper, mint, dill, and nutmeg.
3: Mix well with hands and shape into 2 inch patties. Dredge well in flour.
4: Fry patties over high heat in mixture of butter and oil. Turn once.
5: Drain on paper towels.
6: Serve with any flavor pilaf, and a hot vegetable.
7: These freeze well. Defrost when ready to use. Reheat in aluminum foil at 400 degrees F for 20 minutes, or add to a tomato spaghetti sauce.
